It’s nearly 100 degrees today but our Bounty Box is looking like fall. We’ve got salad greens, bell peppers, jalapeños, okra, green beans, tomatoes, Irish potatoes, pecans and butternut squash. I also picked up some cherry tomatoes and some local goat cheese, thinking that I may end up stuffing the jalapeños sometime this weekend. The potatoes and the squash would make an excellent soup but I’m not sure we could handle hot soup right now so it’s looking like either butternut squash risotto or maybe a salad with squash, apples and pecans topped with a dressing of walnut oil and balsamic vinegar.
